This goats cheese and tomato pasta is such an easy but slightly elevated dish that feels a bit special without much effort. I don’t always use goats cheese, but when I do it adds such a lovely creamy tang to simple tomato sauces.
Pappardelle works really well here as it holds the sauce beautifully, but you can use any pasta you have. Finished with toasted pine nuts, it’s simple but full of flavour.

Ingredients
- Olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red chilli, finely chopped (optional)
- Splash of white wine (optional)
- 1 tin chopped tomatoes or 400g passata
- A handful of spinach
- 100g goats cheese
- 250g pappardelle (or any pasta)
- 2–3 tbsp pine nuts, toasted
- 1 tsp oregano Salt and pepper, to taste
Method
- Bring a pan of salted water to the boil and cook the pasta according to packet instructions.
- Meanwhile, heat a drizzle of olive oil in a pan over a medium heat.
- Add the onion and cook until softened.
- Stir in the garlic and chilli (if using) and cook for another minute.
- Add a splash of white wine if using and let it bubble for a minute.
- Pour in the tomatoes or passata and add the oregano.
- Simmer for 10–15 minutes until slightly thickened.
- Stir in the spinach and allow it to wilt.
- Add the goats cheese and stir gently until it melts into the sauce.
- Drain the pasta and add it to the sauce, tossing to coat well.
- Season with salt and pepper to taste.
- Serve topped with toasted pine nuts and Garlic Bread if you fancy.
Variations (choose what suits your family)
- Protein: Add cooked chicken for extra protein
- Vegetables:
- Swap spinach for kale or leave it out.
- Add peppers or courgette for added veg
- Spice level: Adjust chilli to taste
- Pine nuts: Walnuts or seeds can be used instead
- Creamy version: Stir through crème fraîche, cream, or soft cheese
- Boursin is my absolute favourite
Notes
For fussy eaters, leave out the chilli, use a milder cheese and chop the spinach finely, or leave it out 🧅🫑
