Savoury Cheese & Salami Tartlets

These savoury cheese and salami tartlets are such an easy option for lunch, a light dinner or a picnic. Using ready-made shortcrust pastry keeps them simple and fuss-free, and the filling is easy to adapt with whatever you have in the fridge. They’re delicious served warm or cold with a crisp salad on the side.

Makes around 6 individual tartlets, or 1x large flan

Ingredients

  • 1 pack ready-made shortcrust pastry
  • 1 red onion, finely chopped
  • 6–8 sun-dried tomatoes,chopped
  • 1 red chilli, finely chopped (optional)
  • 100g salami, chopped
  • 150g mixed grated cheese
  • 200g crème fraîche
  • Salt and pepper, to season
  • 1 tsp oregano
  • A handful of cherry tomatoes, halved, to decorate

To Serve

  • Salad or crusty bread

Method

  1. Preheat the oven to 180°C fan and lightly grease your tartlet or small flan tins. You can also make one larger tart if preferred.
  2. Roll out the shortcrust pastry if needed, then use it to line the tins.
  3. Blind bake the pastry cases for 10–12 minutes, until just lightly golden.
  4. Meanwhile, add the red onion, sun-dried tomatoes, chilli if using, salami, grated cheese and crème fraîche to a bowl.
  5. Season with salt, pepper and oregano, then mix well until combined.
  6. Spoon the filling into the pastry cases.
  7. Top with the halved cherry tomatoes.
  8. Return to the oven for 20 minutes, or until the filling is set and golden on top.
  9. Serve warm or cold with a crisp salad.

Variations (choose what suits your family)

  • Leave out the chilli to keep the flavour milder.
  • You could use a more familiar deli meat if salami feels too strong – cooked bacon or ham works well
  • Try using a mild cheddar or mozzarella-heavy cheese mix for a gentler flavour.
  • You can keep some tartlets simple and leave out ingredients like onion or sun-dried tomatoes if needed.
  • Or add olives, sweetcorn or chopped peppers or any other ingredients you choose

Notes

  • Store leftovers in the fridge for up to 2 days.
  • Enjoy cold, or reheat in the oven until warmed through.
  • These are handy for lunchboxes or quick lunches the next day.
  • Homemade shortcrust pastry can be used, but shop-bought works perfectly.
