Crispy Chicken with Creamy Jalapeño Sour Cream Sauce

I LOVE this dish, and it is so simple to make. Crispy breaded chicken served with basmati rice and a creamy jalapeño sour cream sauce. The chicken is coated in flour, egg and breadcrumbs before baking or air frying until golden and crisp. A simple but flavour-packed dinner that’s perfect for a quick midweek meal.

Ingredients

For the Chicken

  • 2 chicken breasts
  • Salt and pepper, to taste
  • 1 tsp paprika
  • 3–4 tbsp plain flour
  • 1 egg, beaten
  • Breadcrumbs (enough to coat the chicken)
  • Oil spray or a little oil

For the Sauce

  • 1 onion, diced
  • 1 green pepper, diced
  • 1–2 jalapeños, finely chopped (or from a jar)
  • 1 tsp paprika
  • ½ tsp chilli powder
  • ½ pint chicken stock (add as needed)
  • Salt and pepper, to taste
  • 3–4 tbsp sour cream (I add heaped tbsp’s)

To Serve

  • Basmati Rice
  • Crusty bread (optional) if you enjoy soaking up any additional sauce

Method

  1. Season the chicken breasts with salt, pepper and paprika.
  2. Place the flour, beaten egg and breadcrumbs into three separate bowls.
  3. Coat each chicken breast first in the flour, then dip into the egg, and finally coat well in the breadcrumbs.
  4. Place the breaded chicken on a baking tray or in the air fryer basket. Lightly spray with oil if using.
  5. Cook in the oven or air fryer until golden, crispy and cooked through (around 18–22 minutes depending on thickness).
  6. While the chicken is cooking, heat a little oil in a frying pan over medium heat.
  7. Add the diced onion, green pepper and jalapeños and cook for 4–5 minutes until softened.
  8. Stir in the paprika, chilli powder, salt and pepper.
  9. Reduce the heat and stir in the sour cream and some of the chicken stock. Continue adding the stock gradually until you have a creamy consistency and a flavourful sauce.
  10. Plate the crispy chicken and serve over basmati rice with the creamy jalapeño sauce spooned over the top.

Variations (choose what suits your family)

  • Courgettes make a great addition to this dish instead or as well as the peppers and onion. As always in my recipes, you can add mushrooms as long as you don’t tell me 😉
  • Garlic can be added to the dish if you are like me and think that everything tastes better with garlic.

Notes

Adjust the number of jalapeños depending on how spicy you like the sauce.

The chicken can be cooked in either the oven or air fryer.

This dish also works well with grilled chicken if you prefer a lighter option or chicken that has already been breaded for an even simpler meal.
